INGREDIENTS
- Fresh Baked Sourdough, 1 slice
- Heirloom Tomato, sliced 1/4 inch thick
- Fresh Cheese, 2Tbs - we like burrata, goat chevre, or feta
- Pesto, 1-2Tbs
- Butter, softened
- Black Pepper, fresh cracked
- Balsamic Vinegar, drizzle
INSTRUCTIONS
- Heat a cast iron griddle on medium
- Butter both sides of the bread and place on heated iron
- Toast until golden on both sides
- Remove from heat
- Spread pesto on bread, top with cheese of your choice, and slices of tomato.
- Sprinkle with thick grain salt and grind on fresh pepper
- Serve
This recipe is written to serve one because we love it for a midday snack on a busy day. It is easy, of course, to multiply and serve as a course at a dinner party. You may note, we listed a few cheeses. This means you'll have to make it more than once to try them all - and honestly, you'll probably come up with a few options you can tell us about.
If you don't have fresh pesto, skip it and add fresh basil leaves. Maybe you'll decide you want oregano instead - go for it!
With the balsamic, choose a high-quality vinegar. Sure, you may pay a little more, but the flavor reward is worth it. Another option is to find a balsamic glaze that has been reduced down with a bit of sweetness.
